The rump cap (or "picanha") is the muscle that sits on top of the rump. Super versatile — You can either barbecue it as a whole before slicing, cut into steaks then sear on a pan or grill, or prepare them traditionally like in Latin America - put over fire on long skewers. Either way, the top layer of fat along with the generous marbling that runs through the meat is going to give you a succulent texture and a robust flavour to remember.

New Zealand primarily produces grass-fed beef due to the country's abundant pastures, year-round grazing conditions, and a focus on sustainable farming practices. Only selected Wagyu cattle are grain-finished to top them off with better intra-muscular fat (aka marbling).
